Easy yummy chocolate cheesecake bars, recipe makes a bunch! My mom in laws delicious recipe. She makes awesome treats!

Directions
Equipment needed: 9x13 inch baking pan, pastry cutter, parchment paper.
Preheat oven to 350 degrees. Spray a 9X13 inch baking pan with nonstick cooking spray and line it with parchment paper. The cooking spray will hold the parchment paper in place and help the cheesecake cookie bars come out of the pan easily.
Make crust: In a large bowl combine 1 1/2 cups flour, 3/4 cup light brown sugar and 1/2 cup cold butter cubed. Cut in butter with a pastry cutter until mixture resembles a course meal.
Pour crumble in prepared baking pan. Firmly press crumble with your hand or the back of a spoon until it's spread evenly. Bake at 350 degrees for 12-15 minutes or until crust is golden.
In a large bowl beat with an electric hand mixer 2 8-ounce packages of cream cheese, 2/3 cup granulated sugar and 2 teaspoons of vanilla extract until smooth.
In the microwave, melt the 2 cups of semi-sweet chocolate chips.
Next beat with a fork 2 eggs. Add the beaten eggs to the cheesecake mixture and 1/2 cup evaporated milk. Mix until just combined.
Lastly add in melted chocolate and mix.
Pour mixture into prepared cooked crust and spread evenly. Bake for 25-35 minutes just until center is set. Don't overbake.
Allow to cool then refrigerate until firm. Cut, serve and enjoy!
